Smoked Salmon Tartare
Salmon Tartare
Ingredients:
8 oz. diced smoked salmon
1 tsp. minced red onion
1 tsp. minced scallions
1 ½ tsp. olive oil
Juice from half a lemon
Directions:
Combine all ingredients and season with salt. Using a round mold, pack the smoked salmon in tightly. Place the mold on the serving plate and remove. Drizzle the Dijon and caper vinaigrette over the top and around the sides and serve.
Dijon and Caper Vinaigrette
Ingredients:
1 heaping tbsp. Dijon mustard
2 oz. white wine vinegar
1 tsp. minced garlic
1 tbsp. honey
1 tbsp. capers, drained
2 egg yolks
2 oz. olive oil
4 oz. salad oil (vegetable)
Directions:
Combine all ingredients except the oils in a stainless steel bowl. Slowly add the oils while whisking, being careful to do so very slowly or the dressing will separate. Season with salt. Use immediately or store in an airtight container for up to one week.
