Pomegranate Guacamole

Serves: 4 to 6

Ingredients:
2 ripe avocados, cut into small diced
1/2 cup pomegranate arils
1/4 cup cilantro or fresh parsley, chopped
1 to 2 tablespoons lemon or lime juice, freshly squeezed
1/2 cup red onion, small diced
1 jalapeno, seeded and minced (leave seeds in for more heat)
Salt and pepper to taste

Directions:
In a medium-sized bowl, gently mix all ingredients together, being careful not to mash the avocado. Taste and adjust seasonings and spice as desired. Serve immediately, or refrigerate for up to 2 hours. Add a little extra citrus juice if refrigerating to prevent avocados from browning.
