This recipe takes advantage of the abundance of beautiful tomatoes filling our gardens in late summer. A simple yet delicious recipe, this Insalata Italiana is sure to please your friends and loved ones.

Tony's Insalata Italiana

Serves: 4 to 6

Ingredients:
2 ripe avocados, large dice
6-8 medium sized vine-ripened tomatoes, quartered
1 ball fresh mozzarella, large cubes (you may also use bocconcini, the little mozzarella balls)
3 to 4 oz. red wine vinaigrette (see recipe)
Salt and pepper to taste

Directions:
Put all ingredients in a medium-sized mixing bowl, toss together and serve.

Tony’s Tip: To keep the avocados fresh and the salad crisp, this salad is best if prepared just before serving.
