Bellini Cocktail
Ingredients:
1 medium or large fresh white or yellow peach, medium diced
(approx. 1 peach per person)
Chilled Prosecco
Grenadine
Directions:
To create your own peach nectar, you will need to puree the diced peach. You can use a liquid blender, food processor, or food mill. If using a blender or processor, puree very well until a smooth consistency is achieved; there should be no lumps present. To make it even smoother, you can put the puree through a food mill or fine-meshed sieve, but this is not necessary.
To serve, pour 1 part peach nectar into a champagne flute and top with 2 parts Prosecco. Drizzle with Grenadine, give a quick stir and serve.
